3) A speech on grit. This is a concept my Mom introduced me because she thinks I have it. Despite not being the best at a lot of things I continue to keep trying. I still think I am missing the “not getting fazed by failure” part, but maybe I am getting there. Here is a quote I loved from this talk:

“Grit is passion and perseverance for very long term goals. Grit is having stamina. Grit is sticking with your future day in day out, not just for the week, not just for the month, but for years. And working really hard to make that future a reality. Grit is living life like it is a marathon, not a sprint.”

Recipes or Food Blogs

Still not sure if I believe in “healthy sweets,” but I gave these “power cookies” a try

Martha Stewart’s website is where I find some of my best recipes. It has a lot of recipes, but it is not too overwhelming. You can also search by ingredient.

Here are some of my current favorites (which are also very easy to make):

Roasted shrimp with spaghetti squash

Greek Chicken Cutlets (I made this with asparagus with mint butter on the side so that I did not have too much leftover mint. I used the remaining mint the next night to make mojitos!)

Tofu and Broccoli Stir Fry (made this for my boyfriend who had never had Tofu before and he loved it)

Grilled Sweet Potatoes (a favorite when we had a grill)

Sausage, Lentil, and Kale Soup (healthy, easy, and yummy, what more could you ask for?)
